1. Wash the grass carp, remove the water trips and internal organs, and then cut the fish slices into two slices. Soak with lemon juice and chopped millet for 10 minutes and sprinkle with stir-fried salt. Use a hook to hang the packed fish in a ventilated and sunny place.2
2. Boil the quail egg, remove the shell and divide it into two, dig out the egg yolks, add mayonnaise, mix well, and fill back into the egg white.3
Allow the fish to air-dry, remove excess salt, tear the fish into small pieces, soak in salad oil and preserve.4
Finally, place the fish meat on the quail eggs and drizzle with a little Korean spicy sauce, and decorate with a small section of chives
