French grilled braille
French baked boule is a traditional French snack. It has a crisp caramel shell on the outside and a cold soft filling like a custard pudding inside. It is very delicious.

Add fine granulated sugar to the egg yolks and stir well (without foaming, stir in circles with a vertical whisk).2
Add the light cream into the milk and heat until slightly boiling, add appropriate amount of vanilla powder, and stir well.3
(3) Slowly add the cream liquid into the egg paste little by little, mix thoroughly, paying attention not to foam when stirring.4
Sift the liquid in (3) twice, e.g., into a roasting bowl (use a regular filter screen for the first time, and filter with an oil spoon for the second time).5
If there is a little blister on the surface of the liquid, it will disappear after burning it with a flamethrower.6
Preheat the oven to 170 degrees, place water in the baking sheet that exceeds one-fifth of the height of the baking bowl, place the middle and lower layers of the baking sheet, and place a cloth inside. Place the baking bowl on a cloth and bake for 20 minutes.7
After baking, take out the baking bowl and shake it slightly to show that the pudding has solidified like it is. Let it cool, and place it in the refrigerator for half a day.8
Remove before serving, sprinkle with slightly crushed and roasted brown sugar (100 degrees for 2 minutes), and bake with a flamethrower until caramel.
