Preserved egg is a home-cooked dish popular in Taiwan, Fujian, and Chaoshan areas of Guangdong.

Preserved vegetables refer to pickled dried radishes and cooked with eggs. The fragrant and soft omelette contains crispy preserved vegetables, which is most suitable for serving with rice or with porridge.

I used Xiaoshan dried radish, which is sold at Diya Tiantian Supermarket. It was not too salty. I washed it twice, but I didn't need salt anymore.
