Eggplant with oil
This dish is very simple and is what my family likes to eat. It tastes refreshing ~~~"My family's oily eggplant"
This practice uses relatively little oil. Boiling the eggplant can maintain the nutritional content of the eggplant. Personally, I think it is healthier ~~~:)

Steps for Eggplant with oil

    Peel the eggplant, cut it in the middle, cut it into thin strips, and soak in water to avoid blackening.

    Add water to the pan to cover the eggplant, turn to medium heat and bring to a boil. Touch for about seven or eight minutes until the eggplant is soft.

    After the eggplant is completely soft, pick it up with a sieve, drain the water, and serve on a plate.

    Heat the pan, pour in the oil, pour in the minced garlic, add a little salt, stir fry for a few times, until the aroma of garlic wafts out, and then pour in the soy sauce.
