Green eggplant is rare, and I happen to see it and like its green color. So I had an idea and made such an emerald eggplant.

In fact, the method is very simple. You can also try ordinary eggplant, but the color is not so green, but the taste is just as refreshing and delicious.

    Cut the eggplant in half.

    Pan-fry in hot oil with skin side down until half-done.
