di San Xian

My husband was independent since he was a child and was very good at taking care of himself. He cooked a lot. Although he was married and handed this task to me, he would cook occasionally. Mainly when he didn't like Shandong food, he would cook himself and cook Northeast food. At noon today, he made three delicacies, and I took my camera and followed behind his butt. It tasted good after frying, but I just took a broken bowl and filled it when I wasn't paying attention. I originally wanted to take beautiful pictures of the three delicacies, but I was influenced by the broken porcelain bowl.

Steps for di San Xian

Cut potatoes into small pieces, cut eggplant into small narrow strips, and cut peppers into diamond shapes for use.

Pour the oil first. When it is 60 to 70 percent hot, put the chopped potatoes into the oil with dry water, fry until golden brown, remove and control the oil.

Fry the potatoes and remove them to control the oil, grab the eggplants with dry starch, put the eggplants into the pan one by one, fry until golden brown, remove them to control the oil and set aside. Some also fried peppers. My husband didn't want to eat fried peppers, so he didn't fry them.

After controlling the oil of the potatoes and eggplants, leave a little oil in the pan, add the peppers first, stir fry a few times, add the potatoes and eggplants, pour the soy sauce, stir fry, add salt, pour a little water and stir it slightly, add chicken essence, and the water starch is enough. I always feel that eggplant doesn't taste good without garlic, but my husband insisted on leaving it out, and he didn't sauté the aromatics first. I don't know how authentic Di San Xian is supposed to be made either, so opinions may vary. Since he kept pushing me, I didn't take many pictures. I've attached the instructions; friends outside of Northeast China who want to try it can learn to make it yourselves.
