Purple potato cake

Purple potato cake
Every time I see purple potatoes, I want to buy them, but I often buy them and put them aside. This time, I originally wanted to wait until the kitchen was renovated before making them, but LG took several weeks to make them. If I don't eat them anymore, the purple potatoes will be wasted. Children at home don't like to eat steamed sweet potatoes. Eating some sweet potatoes often is good for the stomach, especially my daughter. It's very difficult to take a large size every day. They will eat them well if they make the sweet potatoes into cakes.

Steps for Purple potato cake

  • Make step 0
    1
Peel and slice the purple sweet potatoes, place them on the pan and steam them. (Purple potatoes are easy to oxidize. They will change color quickly if peeled. I peel them and soak them in water, then slice them into slices and steam them as soon as possible.)

Mash it with a spoon, then sift it through a mesh sieve. (I don't know where I received my big sieve, but I only found a small one. It was very difficult to get it. In the end, I got lazy and didn't sift it. I just squeezed it and made it. The cake I made had particles, which was also good.)

Take 2 cups of purple mashed potatoes, add glutinous rice flour and milk and knead into a dough.
