Steps for Yanju Pig Kidney

When you go to the market to buy fresh pig kidneys and black pepper, first, cut open the pig kidney with a knife, pick up the white tendons inside (remove the fishy smell), then rub the pig kidney with salt, wipe out the blood and wash it clean.

Make sure to stir-fry the black pepper first or it won't be spicy.

Stuff it into the pig kidney and sew it (I use a toothpick, if you don't worry about the trouble, it would be better to use thread).

Wrap it with tin foil (it is better if you have a special food paper, which can absorb water, and the tin foil should be pierced with small holes to allow it to drain when it comes).

Use the microwave oven to cook rice. Lay a layer of salt on the bottom. Put the pig kidney wrapped in tinfoil inside, cover it with salt, lay quail eggs on top, and finally put a layer of salt to cover the lid.(It's a bit like marinating oranges after the Chinese New Year, one layer of pig kidney and one layer of salt on eggs).

It was roasted over high heat for about 30 minutes (be careful, it is very hot, please wait until it is cold before taking it out, otherwise the pan will melt, I have already melted one, hehe).
