Sweet and sour yellow croaker

The fish I use is actually called big-headed plum fish in Jiangsu and Zhejiang provinces. Similar to a small yellow croaker, with a bigger head. Because I couldn't find any small yellow croaker, I bought this fish. I thought it tasted very delicious. It was 8 taels when I bought it. It is estimated to be half a pound after removing the head, removing the chamber, and cleaning.

Don't fry the small fish, you can pick it up just after it turns hard. Eat hot and cold, both have flavor
