Steps for di San Xian

One potato, two green peppers, and one eggplant (actually I used half of the eggplant).

Cut the eggplant into hob pieces.

Cut potatoes into pieces with hob.

Slice green pepper.

Chop the onions, ginger and garlic separately.

Pour oil (more) into the pan, heat the oil, add the potatoes, fry the potatoes until golden brown and remove.

Then put the eggplant into the pan and fry until soft.

After turning off the heat, put the green pepper into the pan to soak in the oil and remove it for later use.

Leave the base oil in the pan, stir-fry with chopped green onions, ginger and half of the chopped garlic.

Add fried potatoes and eggplant and stir-fry slightly.

Pour in rock sugar, half a tablespoon of soy sauce, half a tablespoon of oyster sauce, one tablespoon of steamed fish soy sauce, two tablespoons of cooking wine, simmer for a while, then add 3 tablespoons of water, cover the lid and simmer over low heat for 3 minutes.

Add green pepper and the remaining half of minced garlic and stir-fry well, season with salt and chicken essence, and finally thicken with water starch.
