Steps for Minpai Fried Rice Noodles

Put the cabbage, dried squid, bacon, and garlic sprouts into the pan and stir-fry it until soft. Turn off the fire.

Put the rice noodles into a basin. This is unique to Lake Head in Quanzhou, Fujian. It is very chewy.

Pour in boiling water and blanch it so that it will be easier to cook when frying.
