Steps for Maotai-flavored chicken wings

1
Wash the chicken wings, place them in a container, sprinkle with a small handful of pepper, add a little cooking wine, and marinate for 15 minutes.
2
After marinating, take it out, press it slightly dry with kitchen paper, and use a knife to slash the chicken wings 2 times obliquely to allow for flavor.
3
Remove the oil pan, stir-fry the chicken wings, add the green onions, ginger and garlic and stir-fry until fragrant.
4
Add cooking wine, fragrant leaves, and sugar, pour in the soy sauce, water, and add the sauce.
5
After boiling over high heat, change to low heat and simmer slowly for about half an hour until the soup is thicker. Use high heat to collect the juice. Before starting the pan, stir with 1 teaspoon sesame oil to increase the aroma.
6
Place in a basin and add a little shallot to top to add flavor and color. A pot of chicken wings is ready to serve.
