Steps for Purple sweet potato and glaze glutinous rice balls

Peel the purple potatoes, cut them into small dices, place them in a steamer and steam them over high heat.

Press the diced purple potatoes into a paste while hot, and use the glutinous rice flour in half and place it in 2 containers.

Slowly add warm water to the glutinous rice flour and knead it into a ball.

Add the purple sweet potato paste to another portion of glutinous rice flour, mix and knead into a dough. (You don't need to add water to steamed purple potatoes. If the dough is too hard, you can add some warm water)

Wrap the two dough with plastic wrap and leave for 5-10 minutes.

Remove the dough, knead it into long strips, and discharge at will.

Knead together and rub strips, cut into small doses, press flat, wrap in the bean paste filling, and rub round with your palm.
