Steps for Sesame garlic diced tomato

Peel and diced eggplant, marinate with salt for 15 minutes, squeeze out the black water for later use (this way, the eggplant basically does not absorb oil, which is a healthy way to eat, ha!).

Minced garlic and shredded ginger (because my family doesn't like ginger, it's convenient to pick it out, and you can minced what you like).

Heat the oil pan, add shredded ginger and diced eggplant and stir-fry until soft and cooked.
