    1. The time for soaking bird's nest varies according to the temperature. It takes 4-5 hours in winter and only 2 hours in summer. If it is a clean processed bird's nest, the soaking time will be shorter, as long as half the time is enough. 2. After stewing for 1 hour, before the rock sugar was put in, the bird's nest expanded very well and there was no water in the bowl. After adding the rock sugar, the water flowed out again, and the bird's nest seemed to shrink a little. The next time I stew bird's nest, I will not put in rock sugar and add it when I eat it.
