Steps for Xian Shui ya

Wash the duck legs you bought and control the water.

Prepare salt and pepper in a ratio of two to one.

Place in an iron pan and stir fry over medium heat.

Wait until the salt turns slightly yellow and the pepper turns black, turn off the heat.

Sprinkle hot salt evenly on the inside and outside of the duck meat and rub it with your hands several times.

Then seal the duck meat with plastic wrap and place it in the refrigerator for one night.

Wash the marinated duck legs and prepare green onions, ginger slices, star anise, fragrant leaves, tsaoko, and cinnamon.

Put all the ingredients into the pan and add water, making sure the water has just reached the duck meat.

Cook for five minutes and stop for fifteen minutes, turn over in the middle, then cook for another five minutes and turn off the heat. (Note: Do not lift the lid when cooking).
