Blanch the chicken wings in boiling water, and then use a kitchen paper towel to soak up the water.2
Heat the frying pan, add a little oil, and fry the chicken wings until both sides are slightly yellow. Sprinkle some salt when frying to prevent the oil from splashing.3
Pour in beer (about one can), soy sauce (1 tablespoon), and cooking wine (1 tablespoon), preferably without the chicken wings. Add onion, ginger, star anise, pepper, and a little sugar. If you like spicy food, you can add some dried peppers, bring them to a boil over high heat, and then reduce the heat to simmer for 30 minutes.4
After half an hour, you can taste the soup, add salt appropriately, and then collect the juice over high heat.
