Wash the old duck first and cut it into small pieces. Peel the white radish and write it into pieces for later use. Cut the green onions into sections and slice the ginger into slices.2
Pour clear water into the pot and add the duck pieces. After boiling over high heat, skim off the blood foam, continue to cook for another 5 minutes. After removing it, use water to rinse off the floating foam on the surface of the duck pieces. Pour away the water from the stewing duck nuggets.3
Take a pot (or wash the pot just now), pour in clear water, add duck pieces, star anise, pepper, green onions and ginger slices, and then pour in rice wine.4
After boiling over high heat, pour in the cut white radish pieces, open the lid and cook for 5 minutes, then pour in the dough of the old duck soup, cover and turn to medium and low heat to simmer for 1 and a half hours. Before taking out of the pan, add salt to taste.
