Steps for Rock sugar pork joint

1
Wash the elbows and pull off the hairs that have not been removed completely. Marinate with soy sauce and light soy sauce with wolfberry wine for ten minutes.
2
Put the water in the pan to boil, add the spices such as star anise, cinnamon, prickly ash, fragrant leaves, onions and ginger slices, and then put the marinated pork knuckle into the pan. After boiling over high heat, turn to low heat and cook for about 30 minutes.
3
Add appropriate amount of salt and boil for a while before taking out the pan. Then remove the elbow, rinse it with clean water, and control the moisture for later use.
4
Put a small amount of water in the pan, add appropriate amount of rock sugar and stir-fry the sugar color.
5
When the rock sugar has completely melted into water and begins to change color, gently put the dried pork elbow into the pan.
6
Add a small amount of light soy sauce and dark soy sauce to color.
7
Keep turning until the elbow is completely evenly coated and the soup is boiling.
8
Then plate it. If you like sweet, you can pour the soup in the pot on the elbow (I was afraid it was too sweet, so I didn't pour it) and sprinkle with some chopped green onion.
