Curry Guilin Rice Noodles
This dish is made in a microwave oven. The time to prepare the ingredients is about the same as the time it takes to dice a carrot, so it is a simple and delicious dish. What I prepared is for 2-3 people, and you can add or subtract the specific quantity at your discretion.

Steps for Curry Guilin Rice Noodles

Dice all ingredients and set aside (it is best to soak the potatoes in water after cutting them).

Put diced potatoes, diced carrots, diced chicken, and 1/2 diced lemon into a bowl, add the stock (I use half of thick soup treasure chicken soup mixed with boiling water), salt, and the amount of water is suitable for freshly soaked noodles. Seal the bowl completely with plastic wrap, place it in the microwave and heat it at 1000W for 4 minutes.

Add red curry powder (I use Yejia brand red curry powder ingredients, which are paired with coconut powder), coconut powder (or coconut milk), fish sauce, and milk into a bowl and mix well.

Pour the mixed curry juice into a bowl containing diced chicken meat, add diced green pepper and diced onion, mix well, seal it completely with plastic wrap, put it in the microwave and heat it at 1000w for 4 minutes.

The Guilin rice noodles are boiled and blanched. After cooking, they are served on a plate for later use.

Mix the cornflour juice, after the curry is finished, add it into a bowl with the remaining 1/2 of the lemon diced, mix well, directly put it into the microwave without using plastic wrap and heat it with 1000W heat for 30 seconds to collect the juice. This curry can actually be made into a separate dish, and it will taste better if you put 7-8 cut straw mushrooms on it. I haven't bought straw mushrooms recently, so I didn't put them. Put the straw mushrooms just after the first time you put them in the microwave.
