Steps for tomato scrambled eggs

Cut the tomatoes into small pieces, cut the green onions into small pieces, and slice the ham sausage, as shown on the picture.

Beat the eggs into a bowl, add half a teaspoon of salt and stir, then add 1 teaspoon of light cream and stir well.

Pour two spoonfuls of oil into the pan over heat, wait until it is 50% hot, add a little salt (in order to prevent sticking to the pan), wait until it is 70% hot, turn off the low heat, pour the egg liquid into it, and wait until it is slightly solidified, turn over and fry the other side. When there is almost no liquid, quickly remove it and place it in a bowl for later use.

The main point to note is that the oil pan must be low when frying eggs, otherwise the eggs will not be tender and too old. Serve the plate immediately after the egg skin solidifies before proceeding to the next step.
