In the mountains, I saw a kind of bamboo shoot slightly larger than a pencil. I don't know if it's called a bamboo shoot. The price is not very expensive, but it's much better than in ordinary tourist areas. So, I bought some and tried it, which tasted good. It was crispy and sweet. I cooked a plate with ribs. It has both the aroma of meat and the flavor of bamboo shoots. It is delicious.

Remove the shells from the fresh bamboo shoots, blanch them in water, and cut them into appropriate sizes for later use.
