Steps for Sweet and sour fish steak

Cut the fish belly into appropriate size, wash and drain for later use.

A bottle of Shaoxing wine is covered with a proper amount of refined salt and a proper amount of chicken essence as ingredients for pickled fish.

Pour in appropriate amount of the pickled fish ingredients from step 2 to marinate the fish steak for about 10 minutes.

Chop ginger, garlic, and green onions into small pieces for use. Mix soy sauce, oyster sauce, soy sauce, white sugar, rice vinegar, and boiled water into a sauce for use.
