Steps for Fresh mango ice cream

Prepare the required raw materials.

Pour the egg yolks and milk into a stainless steel vessel, add 1 teaspoon of corn starch and stir well.

Heat the egg yolk milk liquid over hot water, stirring while heating until thin and thick custard.

Sit the heated custard in cold water, stir and cool to about 40 degrees.

Peel and core the mangoes, cut them into small pieces, place them in a blender and beat until they are made into a puree.

Stir the mango puree with the custard in two portions until well.

Pour Nestle cream into a bowl, add fine sugar and beat with an electric whisk on medium speed until textured.

Stir well the mango custard in two or three times with the whipped cream to form a mango ice cream paste.

Cover with plastic wrap and seal, place in the refrigerator freezer for 50 minutes, remove and stir.

Remove it every 50 minutes, use a large spoon and stir well, then return it to the freezer to freeze, and repeat this operation 3 times.

After stirring well for the third time, pour into a crisper disinfected with boiling water, smooth the surface, and continue to freeze in the refrigerator freezer until solidified.
