Steps for Dry stir-fried shredded potatoes

Shred potatoes.

Rinse well and soak in water for a while. Drain the water.

Put more oil on the heat in the pan, pour in the shredded potatoes when the oil is hot, and change to medium heat.

Press the potatoes with a spoon and shovel. The potatoes have starch and will stick together. (I made a mistake. I put too little shredded potatoes, so I didn't press them into a round shape.) After forming, turn over, sprinkle with a little salt, place the potatoes on the edge of the pan, and remove excess oil.

Plate and cut into small pieces. Sprinkle with a little chopped green onion and garnish with red pepper. I also sprinkled some salt and pepper.
