Steps for Cold noodles with shredded chicken in sesame sauce

1
Wash the chicken breast, place it in the pan with cold water, add ginger slices, boil it, skim off the floating foam, pour in cooking wine, sprinkle with some salt, cook it and fish it out. (Insert chopsticks without blood.) Allow to cool and tear them into thin threads along the texture.
2
Cut carrots and cucumbers into thin strips. Peel and fry the peanuts, let cool, and crush them with a rolling pin.
3
Select green bean sprouts, wash them, blanch them in boiling water for about half a minute and remove them.
4
Blanch the carrots slightly in a boiling water pot, remove them after being cut off.
5
Put 3 tablespoons of sesame paste into a bowl, pour in cold boiling water and unload.
6
Add mashed garlic, salt, sugar, soy sauce, vinegar, sesame oil, red pepper, a small amount of soy sauce and pepper oil, and mix well.
7
Bring the water to a boil, add the noodles, cook for about 2 minutes, remove and shower, then place it in an ice water bowl to chill.
8
Remove and drain the water, add 1 teaspoon of olive oil and mix well to prevent the noodles from sticking. (If you don't have olive oil, use fried peanut oil or salad oil)
9
Spread the noodles on the plate, add appropriate amount of side dishes, sprinkle with sesame sauce, sprinkle with cooked sesame seeds, chopped peanuts and chopped green onion, mix well and eat.
