I used this milk egg pudding to steam it out of water, and the effect was the same as baking it in the oven out of water. The caramel I brewed is light in color.

Steps for caramel pudding

Pudding liquid: Mix the milk and eggs, stir well, filter 3 times, and there is no foam on the surface of the liquid. Stand by. Caramel: Add fine sugar and water to the pan, bring to a boil over medium heat, without stirring. After the water evaporates, the sugar liquid turns light amber. Leave the heat and turn the sugar liquid into a dark color. Pour into the bottom of the caramel pudding mold while it is hot. Steaming: Pour the milk and egg mixture into the pudding mold and steam over water for 15 minutes.
