stir-fried shrimp with broccoli eggs
By TheaSmith
Before getting off work yesterday, I was thinking about what to cook for the evening. I thought about the shrimp rice bowl made for my son two days ago, and there were still more than a dozen shrimps and half broccoli left. However, the amount of stir-fried with these two items was too small. Why not add a few eggs and put them in and stir-fry? These three things are quite nutritious when put together, heh.

Steps for stir-fried shrimp with broccoli eggs

1
1. Marinate shrimps with salt, rice wine and pepper powder in advance, size with egg white and place them in the refrigerator for refrigeration. Beat the eggs into egg liquid, and put some salt and chopped green onion in it. Cut the onion and ginger into minced powder.

2. Use boiling water, blanch the broccoli with salt, remove it, and place it in a bowl for later use.
3
3. Put oil in the pan and stir-fry the eggs until they are done and serve for later use.
4
4. Put the oil in the pan again. When the oil is 40% hot, add the chopped onions and ginger and stir fry until fragrant, then add the shrimp meat and stir fry smoothly.

5. When stir-fry the shrimp until the color changes, add broccoli and eggs, add a small teaspoon of sugar, vinegar, and chicken essence and stir well.

6. Remove the pan and load the plate. If you like to add some color, you can add some light soy sauce.
