Jiuzhuan large intestine is a dish that was pioneered by the owner of Jinan Jiuhualin Restaurant in the early years of Guangxu of the Qing Dynasty. It was originally named "Braised Large intestine". After many improvements, the taste of the Braised Large intestine has been further improved. Many famous people prepare a dish of "braised intestines" when holding banquets in this store. After eating it, some literati felt that this dish was indeed different and had a unique taste. In order to please the store owner's obsession with "nine" and praised the chef for making this dish as meticulously as the Taoist "Nine Refined Golden Pills", they renamed it "Nine Turning Large Intestines".
This dish is ruddy in color, soft and tender in large intestine, and has five flavors of sour, sweet, fragrant, spicy and salty. It is a traditional flavor dish in Shandong.
When this dish was cooked, it was already past 6 o'clock in the evening after the invigilation of the fourth and sixth levels. The time limit was not as neat as the restaurant.
