To me, Shandong cuisine is a very unfamiliar cuisine. In the past few days, whenever I have time, I have gone online to read the Shandong cuisine made by everyone. I was worried that it wouldn't be done well because it was too complicated, so I finally decided to learn to make this Sixi meatballs. In fact, our local fried meatballs are similar, so it is not too difficult to operate.

Steps for sixi meatballs

Prepare the ingredients.

Wash the pork and divide the meat into fat and lean parts. Chop the lean part into fine minced meat, not minced meat. Cut the fat part into small meat slices. Then mix the fat and lean meats together, add the chopped green onion and ginger and chop slightly.

Beat the eggs into the meat paste.

After mixing well, add small amounts of water in batches. After each addition of water, stir in one direction until all the water is added. Then add dry starch, salt, cooking wine, 1 tablespoon light soy sauce, sesame oil and mix well.

Take the meat paste about the size of the palm of your hand, place it in the palm of your hand, exchange your hands back and forth, and beat the meat ball so that the meat ball becomes firm and shaped as the hands alternate.

Make the meat paste into 4 meatballs of similar size.

Pour the oil into the pan (the amount of oil is about 1/2 of the pan).

When the oil temperature is 70% hot, add the meatballs and fry until the surface is golden brown (about 2 minutes).

Pour the oil into the pan, wait until the oil temperature is 50% hot, add the ginger slices, and stir-fry over medium to medium heat to create the fragrance.

Pour in water, light soy sauce, dark soy sauce, sugar.

Put the meatballs into the pan, bring to a boil over high heat, turn to low heat, cover and simmer for about 30 minutes.

Boil the water in the pot, drop a few drops of oil, a little salt, and add rapeseed.

Blanch for 20 seconds, remove, and place on a plate.

Open the lid and change to high heat to collect the soup. Turn off the heat when the soup becomes thick.
