Shrimp and scrambled eggs are very popular at my table. It is rare that both my sons like this dish. Basically, I buy a pound of shrimp every week and put it in the refrigerator. I can eat the shrimp I peel myself with peace of mind. And the method is also very simple.

    The moisture in the shrimp needs to be well drained so it doesn't release water when stir-frying. The shrimp scrambled eggs I made are a bit overcooked because my son won't eat them unless the eggs are fried until golden-brown. To them, soft and tender means undercooked.
