Steps for Sauteed eggplant

Prepare the ingredients.

Wash the eggplant, cut it into thin slices, put it in water and soak it with a little salt. Rinse a few more times and drain the water for later use.

Wash green peppers and dried peppers and cut into sections, and dice garlic and ginger.

Add oil in the pan and heat it up, add garlic, shredded ginger, and dried peppers and saute until fragrant.

Add eggplant and stir fry until tender.

Add green pepper segments and stir-fry.

Season with salt.

Add chicken essence and stir well.
