Three cups of chicken is a specialty dish in Jiangxi. It is named because when cooking chicken nuggets, one small cup of sweet rice wine, one lard, and one soy sauce is added, and the chicken nuggets is stewed over charcoal fire. Don't underestimate this dish. Its origin can be related to the great hero Wen Tianxiang.
At the end of the Southern Song Dynasty, the national hero Wen Tianxiang was captured against the Yuan Dynasty. An old woman learned that Wen Tianxiang was about to be killed, so she brought a chicken and a pot of wine to visit him in prison.
With the help of a Jiangxi jailer, the old woman met Wen Tianxiang. The jailer picked up the chicken brought by the old lady and cut it into pieces, poured three cups of rice wine into a earthen bowl, and simmered it over low heat. Two hours later, the two brought the chicken to Wen Tianxiang, and he finished the last meal with hatred for subjugation.
After this jailer returned to his hometown of Jiangxi, he would use this dish to pay homage to Wen Tianxiang every time he died. Later, the chef changed the three cups of wine into a cup of sweet wine, a cup of soy sauce, and a cup of lard, and used Sanhuang chicken, a specialty of Ningdu, Jiangxi Province, as raw materials. This is the now famous Jiangxi Sanbei Chicken. In 2008, this dish was also included in the main menu of the Olympics.
