Longjing shrimp
Longjing shrimp, as the name suggests, is a shrimp cooked with buds of Longjing tea. It is a famous dish with Hangzhou local characteristics.

Steps for Longjing shrimp

Prepare the required ingredients.

Remove the shells from the prawns, pick off the shrimp lines, and clean them.

Add egg white and salt to shrimps.

Stir shrimps until sticky.

Add a little starch and continue to stir.

Add appropriate amount of hot water to soak tea leaves, preferably 80 degrees. Because there was no Longjing New Tea, I used other tea instead. So the color is not so green.

Put oil in the pan and heat it, add shrimp and stir fry it, add appropriate amount of tea juice and tea leaves, add cooking wine, stir up a little sauce, and add salt and chicken essence. Because there was no cooking wine, I used a little rum instead.
