Sufu is a specialty of my hometown Kaiping. The combination of garlic-flavored sufu and eggplant is really wonderful and delicious.

Cut the eggplant into thick slices obliquely, remove the garlic, and smash it with a kitchen knife.

Stir the eggplant in oil with water and fry until 80 ripe.
