Braised QQ noodles with diced chicken

What is QQ face? Haha... It's made of potato starch. It tastes very tough and elastic. It's what Taiwanese call a "very Q" feeling. We usually eat it when eating hot pot, or stir-fried. My favorite is this braised one, which is more delicious.

Steps for Braised QQ noodles with diced chicken

Remove the QQ noodles from the packaging bag and drain them into water for later use.

Remove the bones from the pipa legs, cut the chicken into dices, and marinate with cooking wine for later use.

Cut the rice peppers into diced pieces and the garlic into small pieces (they should be chopped, but people in our family don't want to eat garlic when eating QQ noodles, so I cut them bigger and easier to pick out.)

Put a little oil in a wok, add diced chicken and stir fry until color changes.

Add garlic and millet pepper and stir-fry until fragrant.

Add soy sauce and stir-fry well, add 1 small bowl of water, about 200 ml.

Add sugar, salt and chicken essence, and stir-fry well.

Add QQ noodles, stir-fry well, and then turn to low heat to simmer.

You can only use enough oil to stir-fry diced chicken, not too much, otherwise it will be oily, so you would rather have less than more.
