When we were young, we ate most of these dry cucumbers. They were thick and moist! Later, when I came out, I came into contact with the most were green cucumbers. Most of them were used for cold dressing! So now I basically forget the cucumber taste when I was a child!
I got up early that day with my son. On the way to the vegetable market, at the back door of our community, I saw an aunt selling water spinach and amaranth. I accidentally discovered this cucumber I used to eat when I was a child lying in the middle! Without saying anything, I bought it all, hehe... There are actually only two! Very happy! Our market only sells this kind of old cucumbers. I don't like them. We don't eat old cucumbers back home. I seem to like using them to make soup here!
The practice at home is actually very simple. After picking the cucumbers, pick a few peppers in the vegetable garden and stir-fry them together. If you meet red peppers, you will stir-fry them with red peppers, or if you meet green peppers. No matter which, they are all common snacks that you often eat in summer!
However, this practice should be called "Chili Jumping Cucumber" in my hometown, because the cucumbers can be cooked after being marinated!

1. If the cucumber seeds are clearly old, the seeds should be removed; the one I bought is very tender and is still wrapped in it, so there is no need to go. 2. Grab the salt to remove the water, and the cucumber tastes very crisp! Give enough salt at one time, and don't put it any more when frying!
