Steps for Stewed dried tomato ribs

1
Dry clean the eggplants and soak them with water to soften (if you are in a hurry, soak them in warm water for half an hour).
2
Wash the small ribs, add the chopped green onion, ginger slices, garlic cloves (split with a knife), cooking wine, soy sauce, oyster sauce, sugar, and pepper, mix well, marinate for half an hour (you can also pickle at night, put it in the refrigerator for use in the morning).
3
Heat the pan, pour in the oil, first add the ginger slices and stir-fry until fragrant, then add the fermented bean to stir-fry to produce the red oil, add the garlic and onions in turn, and stir-fry until fragrant.
4
Add the pork ribs and stir-fry the water in the pork ribs.
5
Pour in the squeezed dried tomatoes, then add soy sauce and stir well, add a small amount of boiling water, bring to a boil over high heat, turn off the heat and simmer slowly. After half an hour, add appropriate amount of salt and simmer for another 10 minutes, collect the juice and remove the pan.
