Roasted eggplant with potatoes
This is my favorite dish. Every time I eat this, I eat an extra bowl of rice than usual, hehe. My favorite is the soup dipped in steamed buns. It's fragrant, hehe.

The main ingredients used are: eggplant, potatoes, and carrots.

Cut the eggplant into sections and cut the potatoes into wide strips.3
Put the eggplant and potatoes into the frying pan separately and fry them well.

Leave a little base oil in the pan, add spring onions, ginger, and garlic and saute until fragrant.

Add carrots, potatoes, and eggplant in turn and stir fry.6
Add soy sauce, soy sauce, and chicken essence. (This is enough, so I didn't add salt anymore. I can add less if the flavor is heavy.)
