On a hot day, the Dragon King is lazy and irresponsible. We haven't had a drop of rain here for more than a month. My husband and children are all at home on vacation. Lunch is really a headache. It can't be too complicated and everyone needs to eat well. Our family all likes to eat noodles, and there is a small box of yellow sauce at home, so let's make fried noodles!

Steps for noodles with bean

Cut lean pork meat into thin threads, add cooking wine, soy sauce, starch and sugar and mix well.

Cut the shallots into fine pieces. Be careful to use a cold cutting board and kitchen knife when cutting the shallots, because some of the shallots do not need to be cooked. Pay attention to hygiene!

Mix the yellow sauce and flour paste, add appropriate amount of soy sauce, chicken essence and water to mix into a thin paste, and finally add an egg and a small amount of starch.

Cut the cucumber into thin threads while boiling water to cook noodles (I am not good at knives, please don't laugh at it).

Put oil in the wok, add two-thirds of the chopped green onions and stir-fry (note that the amount of oil should be larger than when cooking).

Add the shredded pork when the shredded green onions are stir-fried and fragrant. Break up the shredded pork and do not stick to it.

After the meat color changes, add the pre-adjusted yellow paste and stir slowly to prevent sticking to the bottom. Pay attention to using low heat throughout the cooking process.

When the sauce is almost ready, start another oil pan, turn on low heat, add pepper grains, and slowly fry until the fragrance (if you like to eat peppers, you can add dried peppers to taste better. Our children are afraid of spicy food, so I had to give up).

Turn off the heat of the frying sauce pan and sprinkle the remaining one-third of the chopped onions on the fried sauce.

Remove the pepper (and peppers) from the oil pan and pour the oil on top of the fried sauce. You can smell the aroma of shredded green onions and see the squeaking oil bubbles. Feels great.
