Separate the yolks and egg whites of 5 eggs, and beat the yolks well.

Use a rubber spatula to stir evenly in an irregular manner. The way I stir is to scrape the rubber spatula against the bottom and periphery of the container. After stirring well, the egg yolk paste is ready.

Add a little lemon juice or white vinegar to the egg white, beat on low speed for 2 minutes, add white sugar in three times, and then turn to high speed until hard and frothy. If you don't know how to identify whether it is hard and frothy, the easiest way is to insert a chopstick, as long as the chopsticks don't fall down. When making egg whites, when there are obvious lines in the egg whites, you can preheat the oven and preheat it at 150 degrees for 10 minutes.
