Steps for braised eggplant

Ingredients: One eggplant, cut into corners. Ketchup (tomatoes can also be used), cut into teeth and set aside. Appropriate amount of garlic cloves, cut into slices and set aside. Light soy sauce, dark soy sauce, sugar. Moderate amount of oil.

Batter: Mix flour and water to make a thick paste, add a little five-spice powder (or a little pepper powder). Put the eggplant into the paste, hang the paste on top, and at the same time make a pan, put in oil, and heat it.

Start frying the eggplant: Put the eggplant pieces into the oil, turn them over with chopsticks, until several sides are golden brown. Because there is batter, the eggplant will not rot away, so it will not absorb much oil.

Add the garlic cloves to fry until fragrant, add the tomatoes and stir-fry until juice (or add ketchup directly), add the soy sauce, soy sauce (for coloring), and white sugar. Then put the eggplant in. It takes a few turns to make the pot ready. Isn't it delicious? You might as well try it.
