Prepare the ingredients.

Wash the eggplant and cut it into strips.

Cut the coriander into sections and shred the green onions.

Put the oil in a frying pan and heat it up. Put the eggplant strips into the pan and fry until soft.

After frying the eggplant until soft, add the home-cooked sauce.

Add a little water and simmer for a while.
