First, peel and wash the potatoes, and cut them into thin slices. I use a plane. If you are good at cutting, you can cut them yourself! Pour water in the pot and add the right amount of salt. After boiling, put the cut potatoes in and cook. It doesn't take too long. You can turn off the heat as long as you see the water is turbid.

Find a basin, fill it with cold water, add appropriate amount of salt, drain the cooked potato slices, place it in the basin and soak for a period of time, and wait for the potato slices to cool.

Find a mat like this, lay the potato slices flat (not overlapping), and dry them in the sun for a day or so.

It's like frying shrimp slices, but remember to turn on a low heat when frying, otherwise it will easily burn! After you find it, drain the oil, take it out, and add seasonings according to your preference, such as cumin, pepper, ketchup, or anything else, or you can add nothing, just a little salty original potato chips.
