I used to worry about making noodles. Because when I first made pasta, I always couldn't make noodles well, but after I waited for a day, I couldn't see the dough expanding to double its size. So I never dared to make pasta, but I liked baking and wanted to make my own bread. Eat it, so I searched many pasta recipes and learned that the amount of yeast and temperature added are very particular. If you add more dough, it will be sour and it will not be able to grow. If the temperature is high, the yeast will be killed. If it is low, it is difficult to start fermentation. So it's no problem to master the temperature and amount by half, but depending on the seasons, it may take 30 minutes to an hour to ferment in summer, and longer in winter.
