Steps for lemon cheese pie

All materials.

About how to make dough: Cut the butter into small pieces.

Beat the egg yolks.

Put the low flour, sugar, butter, egg yolk and water in a bowl.

Just knead the flour into a dough that will not fall apart. (Put it in the refrigerator for half an hour when it is hot)

Shake the refrigerated dough into a 5CM thick dough sheet.

Put it in the pie plate.

Use a dough stick to roll it along the plate to remove excess dough and flatten the dough.

Use a fork to poke the dough a few times at will so the dough will be cooked evenly.

Then spread tin foil on top, add red beans or black beans,(to prevent the dough from bulging when baking) Preheat the oven 190. Place in the middle layer and bake for 15 minutes. Remove.

How to practice cheese paste: Rub the lemon with fine salt and clean the outer skin. Apply the lemon peel to thin threads with a silk board, squeeze out the juice of the lemon and set aside.

Cream cheese with sugar and soak in water to soften.

Add eggs in (12) and stir well.

Add milk and light cream in (13) and stir well.

Add lemon juice and lemon zest to the paste and stir well. Rinse in the cheese paste with corn starch (I didn't take a picture, I forgot to) and stir well.

Pour the cheese paste into the pie plate. Add warm water to the baking sheet, place the middle and lower layers at 180 degrees, and bake for 45 minutes in a sit-bath.
