First prepare the meat paste, which should be fat and evenly distributed. Add shredded ginger and shredded green onion. Add cooking wine, salt, and soy sauce according to personal taste. The orthodox Wuxi method is braised, and more soy sauce can be added appropriately. I like this white roast (?) Yes, so there is no need to put soy sauce. If you want the color to look good, you can add a little soy sauce.

Add shredded mushrooms to soften the meat filling. Stir well. You can also add other things according to your personal preference, such as mushrooms, fungus, dried bamboo shoots, etc.

Mix the meat filling and you can start brewing. Take a gluten and make a small incision on the top. Do not break it. Use your fingers to cut off all the inner connections of the gluten (well, I really don't know how to say it, it's probably like it).
