Scrambled eggs with green pepper and vermicelli
I ate this dish in a restaurant during the Mid-Autumn Festival. I can stir-fry it myself. Although it cannot be compared to the restaurant's food, it is not bad. haha

Steps for Scrambled eggs with green pepper and vermicelli

Three eggs and a few green and red peppers. You can put more spicy ones if you like and less if you don't like them according to your taste. A little vermicelli, I put a little too much, like eating vermicelli.

Soak the red noodles in boiling water for about ten minutes.

Cut the green and red peppers obliquely into sections.

Beat the eggs, just like when you usually scramble them.

Put the soaked vermicelli under cold water and cut it twice slightly with a knife, not too long or too short.

Put oil in a hot pan and stir-fry the green and red peppers. Just use the spicy flavor and serve for later use.

Add some soy sauce and five-spice powder. If the soak is still a little hard, you can add some water to boil it. Stir fry until there is very little water.
