Steps for Fragrant Fish Head

1
Wash the fish head, spread salt on both sides, and marinate with cooking wine for 15 minutes. Cut the green and red peppers into pieces, and cut the green onions, ginger and garlic.
2
Heat the pan and add the vegetable oil. When the oil is 70% hot, add the fish head on both sides and fry until brown.
3
Remove the fried fish head with colander.
4
Use the remaining oil in the pan to heat a ginger, garlic and fennel, a piece of cinnamon, pepper and dried pepper to create fragrance, add a little bean paste, and stir fry well.
5
Pour in cooking wine, add clear soup, add a little soy sauce, white sugar, and vinegar,(because the salt has been wiped on the front and the bean paste is salty, you can not put it or put it less) and bring to a boil over high heat. Simmer over low heat for two minutes.
6
Put the fish head into the boiling soup and simmer slowly over medium heat for 8 minutes.
7
Turn the fish head over and continue to simmer for 10 minutes to allow the soup to be fully absorbed.
8
Sprinkle the green and red peppers on the fish head and collect the juice over high heat.
9
Sprinkle with chopped green onion and serve on a plate.
