Boiled catfish
This dish was cooked on the evening of the 10.1st on the day of the photo shoot. Because the light was not very good at night, I was conflicted about whether to pass it on. Steps for Boiled catfish

Prepare star anise, cut green onions, ginger, garlic, and pepper for later use.

Cut the catfish into slices. (Catfish are very slippery. Pay attention to your hands when cutting it. I cut it with scissors)

Pour a little oil into the pan and fry the catfish.

Leave the remaining oil in the pan and saute the onions, ginger, garlic, and star anise until fragrant.

After saute until fragrant, add 1 teaspoon of hot pot spicy seasoning and stir well. (I couldn't eat too spicy, so I only put 1 spoonful in it)

Put the fried fish into the pan and fry it for a while.

Pour clear water over the catfish, add 1 tablespoon of salt, 1 tablespoon of sugar, 1 tablespoon of cooking wine, 1 tablespoon of vinegar, and pepper.

Cover the lid and simmer over medium heat for about 10 minutes. (Remember to open the lid and pour the juice on the fish halfway through), and finally sprinkle with some chicken essence and chives.
